Soooo the latest eating trend takes it’s cues from cavemen.  Cavemen?  DO cavemen (and cavewomen) even fall into my Creationism belief system?  Not really.  But that doesn’t mean that I am not up for the challenge of recreating some of my favorite foods for my paleo-eating friends.  So I’m starting with this super easy Honey Almond Custard  with Crispy Coconut Cookies and it turned out every bit as delicious as this sugar eating, non cavewoman, Creation believing baker was hoping.   Enjoy!

Ingredients
  1. 6 egg yolks
  2. 1 1/2 c almond milk
  3. 1/2 c honey
  4. 1 t vanilla
  5. pinch salt (If you are super strict Paleo, skip the salt, if not it adds the perfect richness and I would never dream of leaving it out!)
Instructions
  1. Preheat oven to 350 degrees.
  2. Bring a few cups of water to a boil for baking while you are mixing the custard.
  3. Whisk all ingredients together then pour through a fine sieve strainer into 4 ramekins.
  4. Place the ramekins in a 9x13" cake pan. Place pan on the center rack of the oven, then pour the boiling water halfway up the sides of the ramekins. Bake custard for about 35-40 minutes until sides are set and centers are still a bit jiggly.
  5. Remove from oven and cool slightly. Serve warm with Crispy Coconut Cookies and berries, or cool completely and store covered in the fridge for up to 4 days.

Ingredients
  1. 1 egg white, beaten to soft peaks
  2. 1/3 cup unsweetened coconut flakes
  3. 1/3 cup almond meal
  4. 2 T honey
  5. pinch salt (omit if strict Paleo, but a must in my opinion!)
Instructions
  1. Preheat Oven to 325 degrees.
  2. Mix all ingredients in small bowl. Spoon onto parchment covered cookies sheet by the teaspoon. Flatten with fingers.
  3. Bake for about 15-20 minutes or until browned and edges are crispy. Remove and cool on cookies sheet. Store in airtight container for about a week or freeze.
